Protein Peanut Butter Delight

Ingredients:

  • 2 cups Greek yogurt

  • 1/2 to 3/4 cup natural peanut butter (adjust based on taste preference)

  • 8 to 12 drops of Lakanto liquid monkfruit sweetener

  • Approximately 1/4 cup Lily's chocolate chips

  • Crushed salted peanuts

Instructions:

  1. In a mixing bowl, combine Greek yogurt, natural peanut butter, and sweetener of choice. Whip until well blended and smooth. Adjust the amount of peanut butter and sweetener to suit your taste preferences.

  2. Divide the yogurt and peanut butter mixture into four serving containers or glasses.

  3. In a microwave-safe bowl, melt the chocolate chips in 30-second intervals, stirring in between until fully melted and smooth.

  4. Spread the melted chocolate evenly over the top of each yogurt mixture in the containers.

  5. Sprinkle crushed salted peanuts over the melted chocolate layer.

  6. Place the containers in the refrigerator to chill for at least 30 minutes or until the chocolate forms a crunchy shell.

  7. Once chilled, your Protein Peanut Butter Parfaits are ready to enjoy!

Note: You can also experiment with adding additional toppings like sliced bananas, shredded coconut, or a drizzle of honey for extra flavor and texture.
